Mix things up today by trying out lentils! Lentils are an edible seed in the legume family. You might have had these little guys in soups and stews where they are most popular but try them out in a salad where they can add a protein-packed-nutrient-dense punch!
Vitamin Dea Lentil Salad
Salad:
2 cans of green lentils, 1 cup snap peas, 1 cup red pepper, 1 cup cucumber, 1 cup cilantro
Dressing:
3 tbsp olive oil, 4 tbsp lemon juice (approx. 2 small/1 large lemon, 1 tbsp apple cider vinegar, 1 tbsp honey, 2 tsp dijon mustard, 1 tsp minced garlic, Salt and pepper to taste
Optional add ons: Feta cheeseBasil/other herbs Black olivesQuinoaServe on bed of greens
Directions:
1) Drain and rinse lentils
2) Wash and chop vegetables
3) Whisk together dressing in a separate bowl
4) Combine all ingredients in large bowl and pour dressing on
5) Enjoy
